Pig Organ Soup
Traditional Chinese dish of clear soup cooked with lean pork, fatty pork (belly meat), pigs' innards and organs like liver, kidney, intestines and dried blood. The cooking process is a long term requiring the soup and innards (intestines only) to be boiled over several hours. Known by its Chinese name 猪杂汤 (zhu1 za2 tang1)

Tiong Bahru Market & Food Centre, rebuilt, re-opened in June 2006. The 1st floor has wet market stalls, sundry and clothes shops. Food stalls are on the 2nd floor, and a carpark above that.

The open-air section of the food centre offers al-fresco dining. The landscaped roof-top carpark on the 3rd floor provides much needed convenience for drivers.

Show me on mapThis traditional Teochew stall was originally from the area near the old Thong Chai (or Tong Chi to Teochews) Medical Institution in Chinatown/Merchant Road. It is famous for a Teochew dish called ter kah tang (猪脚冻) made from pig trotters that is boiled with pig skin and other parts until a soft gelatinous base is formed, then chilled into a jelly and served cold in small strip pieces. The other signature dish is white shark's meat (白牙沙鱼), another Teochew favourite. This stall's shark meat is extremely white and fresh - the owner says he will not sell it for the day if the morning market cannot provide the quality sharks he requires. The food is served with two types of sauce - a plum-extract-based sweet sauce sprinkled with crushed peanuts, and a quite-common sourish chilli paste. So good are the sauces that the owner charges (20c @) for extras helpings. I didn't care much for the chilli sauce but the plum sauce went very well with the two dishes.
